Ingredients
Pesto Yield: 5 oz
- 4 c. Fresh basil
- 1/2 c. Pistachio, roasted
- ¾ c. Grande Parmesan, grated
- 4 cloves Garlic
- 1 lemon, peeled
- 3/4 c. olive oil
- Salt to taste
- Red pepper flake to taste

- Add all ingredients to Vitamix or similar blender and blend until smooth

Mortadella and Pistachio Sandwich Yield: One Sandwich
- 4”x6” Focaccia bread
- 5oz Pesto
- 3oz. Mortadella (approx. 4 slices)
- 1.5oz Arugula
- 4 Basil leaves
- 3oz. Grande stracciatella
Directions
Mortadella and Pistachio Sandwich
- Cut 4”x6” focaccia bread in half and apply 2.5oz. pesto to each side
- Layer 4 slices of Mortadella in “roses” to ensure air between layers of meat
- Top with 1.5oz arugula and 4 basil leave.
- Finish with 3oz Stracciatella and top with half of bread or serve open faced
