Margherita Grilled Cheese Sandwich

Grilled cheese gets more indulgent and interesting with a flavor fusion inspired by Margherita pizza. Featuring melted slices of Grande Mozzarella Cheese, thin slices of Roma tomato seasoned with olive oil, and fresh basil leaves on thick buttery grilled Italian country bread. Not your mom’s grilled cheese!

Margherita Grilled Cheese Sandwich Yield: One sandwich
  • 2 slices Rustic Italian panini bread slices
  • 3 slices Grande Sliced Mozzarella
  • 3 oz. (8 slices) Marinated Roma Tomatoes (see recipe)
  • As needed Butter, melted 3 slices Grande Sliced Mozzarella

DIRECTIONS

Margherita Grilled Cheese Sandwich
  1. Brush outer surfaces of 2 bread slices lightly with butter.
  2. Arrange 1 slice of bread, butter side down, on flat work surface; top with 3 slices Grande Sliced Mozzarella Cheese and 8 slices marinated Roma tomatoes. Close with top slice of bread, butter side up.
  3. Grill in a preheated panini grill until bread is golden and cheese is melted.
  4. Diagonal-slice sandwich in half. Serve.

Marinated Roma Tomatoes Yield: 36 oz. (12 servings)
  • 3 oz. (6 tbsp.) Olive oil
  • 1 oz. (2 tbsp.) Red wine vinegar
  • 2 each Garlic cloves, fresh, smashed
  • 1/2 oz. (1/4 cup) Fresh basil, chiffonade
  • 1 tsp. Kosher salt
  • 1/2 tsp. Black pepper, coarse ground
  • 2 lbs. (8 cups) Roma tomato slices, 1/4-inch

Marinated Roma Tomatoes
  1. Combine marinade ingredients in half-size hotel pan and whisk to blend; add tomatoes. Cover and chill to hold.
  2. Hold at room temperature for service.
