Marinated Mozzarella Bruschetta

Marinated Mozzarella Bruschetta

2 oz. (1/4 cup) Lemon Basil Marinade (see recipe)

5 1/2-inch Baguette slices

1/2 oz. (1 cup) Spring mix lettuce blend

1 Lemon wedge, fresh

1 Basil sprig, fresh

Lemon Basil Marinade

3 oz. (2 cups) Fresh basil leaves, packed

8 oz. (1 cup) Lemon juice, fresh

4 oz. (1/2 cup) White wine vinegar

1/2 oz. (1 tbsp.) Sugar

2 tsp. Kosher salt

2 tsp. Black pepper

1/2 oz. (1 tbsp.) Shallots, minced

1 tsp. Garlic, minced

1/4 tsp. Crushed red pepper flakes

16 oz. (2 cups) Olive oil


Marinated Mozzarella Bruschetta
Yield: One Appetizer
  1. Place 5 slices Grande Fresh Mozzarella in shallow container; drizzle 2 oz. Lemon Basil Marinade over cheese slices to evenly coat.
  2. Arrange 5 toasted baguette slices on appetizer plate; top evenly with 1/2 oz. lettuce blend and marinated cheese slices. Drizzle remaining marinade evenly over baguette slices.
  3. Garnish plate with 1 lemon wedge and 1 basil sprig.
Lemon Basil Marinade
Yield: 32 oz. (16 servings)
  1. Combine all ingredients in food processor fitted with a steel blade. Mix until fully blended.
