Chipotle Bacon Yield: One 14” Pizza
  • 14 oz. Pizza dough ball, slacked
  • 3 oz. Chipotle Bacon Aioli (see recipe)
  • 10 oz. Grande Fumella Smoked Mozzarella
  • 6 oz. Chorizo, crumbled
  • Cilantro, finely chopped, to finish

Directions

Chipotle Bacon
  1. Stretch pizza dough to 14” round.
  2. Spread 3 oz. chipotle bacon aioli evenly over pizza dough, top with 10 oz. Grande Fumella and 6 oz. Chorizo.
  3. Bake at 500°F for 8 to 10 minutes or until cheese is melted and crust is golden.
  4. Remove pizza from oven and finish with cilantro. Cut into slices and serve.

Chipotle Bacon Aioli
  • 1/2 lbs. Bacon, cooked
  • 12 oz. (1 can) Chipotle Peppers in Adobo Sauce
  • 2 cups Mayonnaise
  • 2 tsp. Salt

Directions

Chipotle Bacon Aioli
  1. Combine 1/2 lbs. bacon, 12 oz. Chipotle peppers and puree.
  2. Add 2 cups Mayonnaise and 2 tsp. salt and puree until smooth.
  3. Store in squeeze bottle or sealed container.
