Four Cheese Wild Mushroom Pizza

The rich flavors of Grande Ricotta, Mozzarella, Provolone and Parmesan are complemented by delicious earthy mushrooms and sweet onions to make this a standout signature pizza.


16 oz. Pizza dough ball, slacked

1/4 tsp. Ground nutmeg

3 oz. Fresh mushrooms, such as shiitake, baby bell or button

11/2 oz. Caramelized onions

Oregano, fresh, chopped, as needed

Salt, as needed

Ground black pepper, as needed


Yield: One 14-inch Pizza
  1. Roll out dough ball to form pizza crust.
  2. Stir together Grande Ricotta cheese, 50/50 Blend and nutmeg.
  3. Spread cheese mixture over pizza. Top with mushrooms, caramelized onions, fresh oregano and Grande Parmesan.
  4. Bake at 500°F for 6 to 8 minutes in a deck oven or 5 to 7 minutes in an impingement oven until cheese is melted and crust is golden brown.
