Italian Chopped Kale Salad Yield: One salad- 2 1/2 oz. (5 cups) Radicchio, romaine and kale lettuce blend, chopped
- 2 oz. (1/2 cup) Grape tomatoes, halved
- 1 1/2 oz. (1/4 cup) Marinated artichoke heart quarters
- 1 1/2 oz. (1/3 cup) Chickpeas, canned, drained
- 1 1/2 oz. (1/4 cup) Kalamata olives, pitted and drained
- 1/2 oz. (6 slices) Italian salami, julienne-cut
- 1/2 oz. (2 tbsp.) Pepperoncini peppers, sliced, drained
- 1 oz. (3 tbsp.) Red wine vinaigrette
- 3/4 oz. (1/3 cup) Grande Shaved Parmesan
Directions
Italian Chopped Kale Salad- Combine 2 1/2 oz. kale lettuce blend, 2 oz. grape tomatoes, 1 1/2 oz. artichoke hearts, 1 1/2 oz. chickpeas, 1 1/2 oz. olives, 1/2 oz. salami, 1/2 oz. pepperoncini peppers, 1 oz. red wine vinaigrette and 3/4 oz. Grande Shaved Parmesan in a bowl and toss to blend.
- Transfer to salad plate or bowl.
