- 1 head Radicchio
- 1 cup Mesclun
- 2 tbsp. Extra virgin olive oil
- 1/2 Lemon, juiced
- 1/2 cup Grande Ricotta Prima Dolce®, cut into 1/2" cubes
- Salt and pepper to taste
DIRECTIONSRadicchio Ricotta Salad Cup
- Carefully pull away a full leaf of radicchio.
- Cut a second leaf into 1/8 ” strips and mix in bowl with mesclun, extra virgin olive oil, lemon juice, salt and pepper.
- Gently fold in Grande Ricotta Prima Dolce® cubes.
- Serve in radicchio leaf.
