Radicchio Ricotta Salad Cup

Mixed greens are dressed with lemon juice and extra virgin olive oil, topped with cubes of Grande Ricotta Prima Dolce® and served in a cup of radicchio leaf. This mix of ingredients will balance the flavor of radicchio and create a unique salad your customers won’t see coming.

Radicchio Ricotta Salad Cup
  • 1 head Radicchio
  • 1 cup Mesclun
  • 2 tbsp. Extra virgin olive oil
  • 1/2 Lemon, juiced
  • 1/2 cup Grande Ricotta Prima Dolce®, cut into 1/2" cubes
  • Salt and pepper to taste

DIRECTIONS

Radicchio Ricotta Salad Cup
  1. Carefully pull away a full leaf of radicchio.
  2. Cut a second leaf into 1/8 ” strips and mix in bowl with mesclun, extra virgin olive oil, lemon juice, salt and pepper.
  3. Gently fold in Grande Ricotta Prima Dolce® cubes.
  4. Serve in radicchio leaf.
