Ricotta Soppressata Toast

Ricotta Soppressata Toast Yield: One appetizer
  • 5 - 1/2-inch Baguette slices, toasted, warm
  • 3 oz. (3 slices) Grande Prima Dolce® Ricotta, sliced
  • 1 1/2 oz. (10 slices) Soppressata salami, thin sliced
  • 3 1/2 oz. (1/4 cup) Marinated Cherry Tomatoes (see recipe)
  • Garlic butter, warm, as needed

DIRECTIONS

Ricotta Soppressata Toast
  1. Brush 5 toasted baguette slices lightly with garlic butter; top evenly with 3 oz. sliced Grande Prima Dolce® Ricotta and 2 slices soppressata; arrange toast on plate.
  2. Top toast evenly with 3 1/2 oz. Marinated Cherry Tomatoes (see recipe).

Marinated Cherry Tomatoes Yield: 42 oz. (12 servings) marinated cherry tomatoes
  • 2 1/4 lb. (3 cups) Tri-color cherry tomatoes, halved
  • 6 oz. (3/4 cup) Red wine vinaigrette
  • 1/2 oz. (1/4 cup) Italian parsley, chopped

  1. Combine all ingredients in container and gently toss to blend. Cover and chill to hold.
